Ingredients

For Dumplings

  • 2 lbs ( approx 1 kg) Bok choy , julienned & washed
  • 1 box – firm tofu, drained & mashed
  • 1 package- wonton/ dumpling wrapper
  • 3 to 4 tbsp (1/4 cup) saute mushrooms
  • 3 teaspoon corn starch
  • 3 teaspoon black bean
  • Oil
  • Salt according to taste

For Spicy Sauce

  • 1 tbsp sesame oil
  • 5 tbsp chili oil with chili crumbs
  • 3 to 4 tbsp soy sauce
  • 1/2 tbsp chinese black vinegar
  • 1/2 tbsp ginger (grated)
  • 1/2 tbsp white sugar

Directions

In a small bowl, mix all ingredients for spicy sauce, chili oil , sesame oil, soy sauce, black vinegar, ginger, sugar & stir well.

Take a large bowl, put washed & julienned bok choy with 1/2 tbsp salt, gently massage all the veggies with your hands. Let be put aside for 18-20 min.

Now take a pan , heated with low flame, take 1/2 tbsp oil & saute mushrooms until it gets light brown. Now mix black bean sauce & stir uniformly. Then fry mashed tofu for about 2-3 min in another pan. Then add both ingredients & sprinkle some salt.

Squeeze out liquid from bok choy as much as possible. Mix tofu mixture, 3 teaspoon corn starch well. Put a dollop of mixture in centre of wrapper, moisten the side with water & seal.

Then put wontons on steamer for 12-15 min in medium – high heat. Then serve with spicy sauce.
