Instead of searching pasta near me, lets get into the homemade pasta recipe with pasta sauce. To make a perfect pasta bowl you must have all the ingredients mentioned below or also some alternatives given below.

Roasted Veggie Pasta Recipe with Pasta Sauce | Pasta Bowl

Ingredients

Pasta & Sauce

  • 500gm or 1 lb. penne
  • 425gm or 15 ounce ricotta
  • 2 cups shredded Italian cheese blend or you can use mozzarella/parmesan
  • 1/4 tablespoon pepper
  • 1/4 teaspoon salt
  • 2 tablespoon chopped fresh parsley.

Roasted Vegetables

  • 1 cucumber/Zucchini
  • 1 onion/yellow onion
  • 1 yellow squash
  • 2 tablespoon olive oil
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 bell pepper

Red Sauce

  • 3 tablespoon tomato paste
  • 1/2 cup water 
  • 1/4 teaspoon salt
  • 2 tablespoon butter
  • 1 tablespoon Italian seasoning or you can use a mix of dries basil and oregano.
  • 1 yellow onion/onion
  • 28 ounce or 750gm can crushed tomatoes

Directions

Preheat the oven to 210ºC or 400ºF. Cut the zucchini/cucumber, red onion,  yellow squash, and bell pepper into small pieces. Spread the sliced vegetables on a baking sheet. Drizzle with oil and spread a pinch of salt and pepper. Shake and stir until the veggie’s coated completely with oil..

Now, time to roast the vegetables by putting it in the preheated oven, stir once half way, for about 45 minutes or until the vegetables turned to brownish and soft.

Now, time to make red sauce while the vegetables being roasting. Take a sauce pot or its alternate, cut the yellow onion into slices and put it into the pot with butter. Mix it for 5 minutes or until the onion becomes soft. Now, all remaining sauce ingredients [crushed tomatoes, tomato paste, Italian Seasoning/oregano, salt, water] and stir well. Wait for the sauce to come up to a simmer, then low  the heat down and let it simmer, stirring occasionally for about 30 minutes.

In small/medium bowl, take the ricotta cheese, 1 cup of shredded cheese and stir it well by adding salt and pepper into it. Now, take a large pan for  water to boil  penne. When water starts to boil add the penne until the pasta becomes softer/tender. Drain the penne.

Take the drained pasta into a medium bowl and stir one cup of already made red sauce to give it the flavors. In the remaining red sauce add the veggie’s and stir it well.

Now, follow this step carefully because this is the most important to give it flavor as it is. First, take a casserole and place half penne [coated with red sauce]  then add the next layer of cheese mix then followed by the half roasted vegetables and red sauce mixture. Now, again place the second half of the coated pasta, cheese and vegetables. At last cover it with its top layer of shredded Italian or Mozzarella cheese.

Now, Cover the casserole with an aluminium foil and also make sure that foil do not touch the top layer. Place the casserole in the oven (still turned on to 210ºC 400ºF) and bake for about 35 minutes. After 35 minutes, remove the foil from the casserole and switch the oven from bake to broil. Now wait for 3-5 minutes. Take out the casserole carefully and garnish it with chopped parsley. And your pasta bowl is ready with pasta sauce by following such an easy and great pasta recipe.
