Here is the easy and delicious Strawberry Cupcake recipe with strawberry frosting. Cupcakes are easy to made and fun to eat if made properly. They are moist, sweet and flavored which are loved by kids specially. Strawberry cupcakes can be customized in many ways like replacing the frosting with soe other flavors or by changing the ingredients in the cupcakes.

Here in this recipe we made the cupcakes and frosting witth fresh strawberries but to reduce the timings you can replace them with strawberry sauce and strawberry essence. Also we don’t mention any thing for sprinkler and toppings because everyone wants to add their own favorite things as toppings on frosting. We just cut a slice of strawberry and put it on the frosting as toppings. Let’s get into the recipe.

Ingredients for Strawberry cupcake recipe:

Here are all the ingredients used in this recipe for strawberry cupcake but we don’t mention any additional as they are depending on your choice:

 

For Cupcakes:

  • 1 ½ cups chopped strawberries (200g)
  • ¾ cup Melted unsalted butter (160g)
  • 1 ⅔ cups all purpose flour (210g)
  • ⅓ cup milk
  • ¼ tsp baking soda
  • 2 large eggs
  • 1 cup sugar (250g)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt

For Strawberry Buttercream/Frosting:

  • 1 ½ cups chopped strawberries (200g)
  • 1 ¼ cups unsalted butter, room temperature (280g)
  • ½ tsp salt
  • ½ tsp vanilla extract
  • Strawberry for toppings
  • 5 cups powdered sugar (570g)
  • 1- 1 ½ cup whipped cream

Instructions:

For Strawberry Cupcake:

  • Preheat oven to 350°F (176°C) and prepare a cupcake pan with cupcake liners and mix the all purpose flour, baking powder, baking soda and salt in a bowl and place aside.
  • Take a large bowl, whisk the melted butter, sugar and vanilla extract together and mix well, now add the eggs, mix well, add the milk and the dry ingredients, again mix well until fully combined. Add the chopped strawberries into the mixture. You can also make these chopped strawberries to a blended pulp.
  • Now, add this mixture to the cupcake liners and fill them half, bake for about 20-25 minutes on 180 degree celcius. Check the cupcakes if it is baked well or not by putting a toothpick into the centre of the cupcake and if it comes out clean then it is already baked. Now set them aside.

For Strawberry frosting

  • To make the frosting there are two ways, first you can make it by using strawberry sauce and other one is by using fresh strawberries. So, if you want to make it without the strawberries which is easier and less time consuming then you can simply add 2-3 tbsp strawberry sauce to the 1 cup whipped cream and add other ingredients.
  • But if you want to make it with fresh strawberries then follow these steps. Take the chopped strawberries and blend them into a blender well. Put it into a saucepan and cook for about 10-15 minutes until thickened and reduced to 6 tbsp. Place it aside and let it cooled down to room temperature or refrigerate it.
  • Now, after refrigerating take a bowl and put butter and sugar, mix it well. Add the strawberry mixture and again mix it well to form into the perfect textured frosting. Now, add the frosting on the baked cupcakes by decorating cone into your own design.
  • You can serve it by refrigerating it for 1-2 days because it is good to make it flavorful. You can also add a slice of strawberry on the top of the cupcake to decorate i
