Ingredients for the eggs fried rice:

  • 1 cup cooked rice (200 gm)
  • 3 eggs
  • 1 tsp salt or according to your taste
  • 1 tsp red/green chili sauce (to your taste)
  • 1/3 cup cooking oil
  • 1 tbsp vinegar
  • 1 tsp soy sauce
  • 1 tbsp chopped garlic
  • 1 tsp chopped ginger
  • 1 tsp black pepper
  • 1 carrot
  • 1/3 cup cabbage
  • 1 red/green/yellow bell pepper
  • 1 spring onion

Ingredients
  

  • 2 cup cooked rice (200 gm)
  • 3 eggs
  • ½ tsp salt or according to your taste
  • 1 tsp red/green chili sauce (to your taste)  
  • cup cooking oil
  • 1 tbsp soy sauce
  • 1 tbsp chopped garlic & 1 tsp chopped ginger (you can also use 1/2 tbsp ginger garlic paste)
  • 1 carrot
  • 1 tsp black pepper
  • cup cabbage
  • 1 red/green/yellow bell pepper
  • 1 spring onion

Instructions
 

  • First, cook the rice and set them aside into a bowl and preheat the cooking oil over medium-high heat into a pan/skillet and put ginger, garlic, onions and carrot into it.
  • Do not add all the ingredients together into the pan, take a gap of 15-20 seconds. Now, after 1-2 minutes add cabbage and bell peppers and again stir it to fry well for about 25-30 seconds.
  • Now, take another pan to cook eggs on medium high flame until fully crumbled. Add the cooked vegetables into the eggs and cooked rice.
  • Mix them well and add vinegar, black pepper, soy sauce and red/green chili sauce. Again stir fry on high flame for about 3-4 minutes.
  • The egg fried rice are now ready to serve but before serving, garnish it with some parsley or any topping ingredients you want.

Notes

Remember, we make this recipe spicy because of its signature taste but if you do not love spicy food then skip the chili sauce or may be use less black pepper. 
You can also skip chopped ginger and garlic and replace them with ginger garlic paste.
