CREAMY VEGAN PASTA SALAD RECIPE | MACARONI SALAD | FRUIT SALAD

Ingredients for Pasta Salad:

  • 1 lb/ 2 cup elbow macroni / whole wheat pasta of your choice
  • 1 to 1.5 cup vegan mayonnaise
  • 3/4 cup tbsp red onion ( diced)
  • 1 cup sliced bell peppers (red, yellow & green )
  • 3/4 cup celery ( diced)
  • 1/2 cup chopped tomatoes
  • 1/2 black olives ( diced)
  • 5 tbsp mustard ( yellow/ dijon)
  • 3/4 tbsp sugar (white, its optional)
  • 1/2 tbsp salt ( may be seasoning or sea salt)
  • 1/2 tbsp black pepper

Instructions for Pasta Salad:

Take a large skillet/ pot, salty water to boil. Now cook pasta/ elbow macroni in salty water approx 6-8 min. Then rinse macroni / pasta in cold water, can place in fridge till it gets cool.

Now take a large bowl & mix all ingredients, red onion , bell pepper, celery, tomatoes, musturd , mayonnaise, salt , sugar & black pepper. Stir uniformly & can refrigerate this mixture if u want.

Then mix cold pasta and with veggie mixture & toss pasta with seasoning & pepper, salt according to taste.

 

Now you can place in fridge for 60-90 min before serving & enjoy the Creamy Vegan Pasta Salad recipe.

How to make this creamy pasta salad more delicious?

In this recipe we add sufficient ingredients but if you want to make this healthy and light salad to a heavy meal then you can add more vegetables. You can add carrot and cucumber or also you can serve this with some baked mushrooms, sweet potatoes.

You can serve this salad with sandwiches or burgers, specially the Black Bean Burger. This pasta salad can be served with any snack type food to add some more meals and nutrients.

How to store?

You can store this Vegan Pasta Salad for 3-4 days but remember to store it in a air tight container and refrigerate it, whenever you want to serve it, just put this out from the refrigerator and enjoy your healthy meal.

Mainly, there are three types of pasta that can be used in this recipe, macaroni, penne and spaghetti. Well, the best type of pasta which add extra flavors to this salad is macaroni, makes it more  delicious.

Penne can be the second option but first you have to cook them well. Then comes the spaghetti, loved by many people but in my opinion it is more like a noodles salad, so, try to choose between penne and macaroni.
