To make the perfect homemade pancakes recipe that is cornmeal pancakes, you just need to grab these few ingredients:

  • 1 cup Water (250ml)
  • 3/4 cup Grind Cornmeal Medium (120g)
  • 1&1/4 cups buttermilk (310g)
  • 2 medium eggs (100g)
  • 1&1/2 cups all purpose flour (210g)
  • 1 tbsp baking powder  (14g)
  • 1 tsp salt
  • 1/4 tsp baking soda (1g)
  • 2 tbsp vegetable Oil (60ml)

How to make cornmeal pancakes recipe?

  • Put 1 cup water to a boil. Then in a large bowl, pour the boiling water over cornmeal and stir it until thick. Wait for 5-6 minutes to cool it down.
  • Now, after it cools down add eggs and buttermilk in it and stir until fully mixed. Take another bowl put flour, salt, baking powder and baking soda in and mix them.

  • Now, mix the cornmeal mixture and flour mixture into a bowl properly.
  • Preheat the skillet or griddle to medium heat. Now, divide the batter or mixture into 5-6 parts or ¼ cup then put it on the griddle and cook until the bubbles starts to make on its edges for about 3-4 minutes. Then cook the other side for same 3-4 minutes.
  • Cook each one with the same steps and your cornmeal pancakes are ready to serve. For servings you can add toppings as you want. Like maple syrup, cranberry sauce etc.
