How to use Zucchini in Pasta?

Well, there are many ways to put zucchini in pasta but in this recipe we discuss about 2 ways. Remember to use the fresh Zucchini.

  • First, you can cut the pasta into long spherical, noodles like structure which is prefer by many. Now to cut the zucchini, the best way is to use a Spiralizer. Spiralizer is important in your kitchen’s equipment because it is used in many other delicious recipes. But if you do not have it then you can also use a Julienne Peeler. You can also use a Mandoline and then cook them by following the instructions given below in the section “How to cook zucchini noodles?”
  • Second, you can cut the zucchini into small pieces and cook them according to the instructions given below. And after cooking them you can blend it into a blender to make it into the form of paste, so that. it can be used as Zucchini Sauce in the pasta. This is my favorite trick to use Zucchini in pasta, it gives amazing flavors.

Ingredients for Zucchini Pasta Recipe:

To make the perfect, delicious and creamy zucchini pasta then you must need these ingredients:

  • 4 large Zucchini (1½ pounds or 700gm)
  • 4 medium shallots (peeled and thinly sliced)
  • 4 cloves chopped garlic
  • 2 tbsp olive oil (extra virgin)
  • Kosher Salt
  • Ground Black pepper
  • ½ tsp red chili flakes
  • ⅔ cup cream (heavy)
  • 1 cup cheese of your choice
  • 1 pound or 450gm Spaghetti
  • ⅓ cup lemon juice
  • ⅓ cup basil leaves
  • ⅓ cup parsley leaves
  • ¼ cup walnuts (toasted and chopped)

Instructions for Zucchini Pasta Recipe:

  1. Put some olive oil in a large skillet or pot over medium heat. Now add shallots and garlic, then sprinkle with salt and pepper and stir well to cook for about 4 minutes.
  2. Now, if you want to use zucchini as the sauce then cut it into small pieces and add zucchini and red chili flakes on medium-high flames and continue to stir until shallots and garlic are deeply caramelized and zucchini is golden in spots and very soft for about 12-14 minutes more. But if you are making the zucchini noodles then cook as per your choice but by following the instructions given below “How to cook Zucchini Noodles?”
  3. Remove the skillet from heat and add heavy cream and cheese on it. Stir to mix well and transfer to a blender. With the interior lid removed and a kitchen towel placed over the opening, start blend on low speed, now increase the speed until a chunky puree forms, Set aside.
  4. Now, in a large skillet or pot of salted boiling water, cook pasta according to directions on the packet. Drain out the pasta when it is cooked and also remember to reserve 2 cups pasta water. Now, add the pasta to a another skillet or pot along with lemon juice, basil, parsley, and contents of blender. 
  5. Now time to stir the ingredients well and sprinkle some salt and pepper according to your taste. Garnish it with chopped walnuts, cheese and herbs.

How to cook Zucchini Noodles?

If you are not interesting in making the zucchini sauce then you can cook and add them into spaghetti/pasta. Today, we discuss two ways of cooking the Zucchini noodles. 

  • First, you can cook in the skillet or pot directly by adding 1 tsp olive oil and avocado oil (optional) with salt and 1 clove garlic with shallots on medium heat for about 2-3 minutes.
  • Second, you can microwave them just by putting the already peeled zucchini into a bowl and microwave them for about 1 minute.
